Spinacia oleracea. Viroflay is a classic, cold-tolerant spinach variety prized for its large, deep green, tender leaves. An excellent cool-season crop for spring and fall gardens, Viroflay is especially valuable for gardeners wanting to extend their food harvest into colder weather. With winter protection, spinach can provide fresh homegrown greens during periods when many other garden vegetables are no longer producing. The large leaves are excellent fresh, cooked, or frozen for later use.
