Eruca sativa. Slow Bolt Arugula is a fast-growing leafy green producing tender, deeply lobed leaves with the distinctive peppery flavor arugula is known for. Selected for slower bolting than standard arugula, this variety provides a longer harvest window as temperatures begin to warm.

Fresh arugula leaves are delicious in salads, sandwiches, wraps, pizza, and other dishes. Harvest young baby leaves for a milder flavor or allow leaves to mature for a stronger, peppery bite. Plants respond well to cut-and-come-again harvesting for multiple harvests of fresh greens.

Planting Tips:
Slow Bolt Arugula grows quickly and performs best during the cooler temperatures of spring and fall. Direct sow seeds outdoors in prepared, well-drained soil and keep the soil consistently moist during germination.

Although this variety is slower to bolt than standard arugula, hot weather will eventually encourage flowering and can give the leaves a stronger, more pungent flavor.

Harvest young leaves when they reach the desired size. Cut leaves above the growing point to encourage additional growth and repeat harvests.

For a continuous supply of fresh arugula, sow another small planting every 1–2 weeks during suitable growing weather.
